½ tsp Sea salt
3 eggs beaten
1 tsp fresh herbs chopped–Parsley/Chives
1 tsp herb salt
3 Tbsp of Gluten Free Flour–Maize, Rice or Chick-Pea
1/2 tsp of Gluten Free baking Powder
¼ cup grated Goat cheese
1 small clove of garlic–crushed
2 tbsp Pure Virgin Olive Oil
Grate the zucchini into bowl and sprinkle with salt. Leave to drain for 15 minutes.
Press zucchini between two paper towels to remove excess water.
Combine the eggs and the dry ingredients to make a batter.
Heat oil in a frying pan, Drop tablespoons of the batter into the pan and flatten slightly with a fork. Cook fritters on both sides till golden.
Drain excess oil on paper towels.
Serve warm or cold with salad and dressing.
